I stumbled upon it as I was assembling a collection of Healthy Zucchini Recipes and vowed to test it out the next time a craving for french fries or fried zucchini struck. I substituted Italian-style bread crumbs for Panko. Add I added a heaping tablespoon of grated Parmesan to the breadcrumbs just because it seemed like a good idea. Super-crispy and just as satisfying as fried, these baked zucchini fries turned out even better than I hoped. And again. Serve them as an appetizer, snack, or side dish, with a little marinara sauce or low-fat ranch dressing for dipping.

Most of the cook time is totally hands-off as the potatoes roast away in the oven. These fries are easy to make and are also very versatile: sprinkle with garlic or chili powder halfway through baking, or top with chopped fresh herbs before serving. Just be sure to line your pan with some foil to make sure cleanup is as simple as possible.
